Bilberry Ice Cream

Wild blueberry pie or wild blueberry dumplings served with sour cream were a staple of summer cuisine in Poland. My mother and grandmother bought them at a summer farmer's market, but they were also sold on little stalls by the roads in woodland areas. Wild Blueberries were delicious, funny – they made our smiles blue, always expensive, and their health benefits were appreciated in healthy juices and jams consumed in winter. Homemade Marzipan

Marzipan is a confection, usually used for icing birthday, wedding and Christmas cakes. It can also be used in biscuits and petit fours and cakes such as German Stollen. Marzipan consists mainly of sugar and almond flour, augmented with almond extract, rose water, and it’s easy and quick to make.  The homemade treat is much more delicious than the store-bought one as it contains up to half less sugar, and almond flour is much stronger in taste. Cinnamon Ice Cream

Ice cream is not strictly for summer and just because it’s cold and dark outside, doesn’t mean you don’t want to enjoy this frosty treat. Cinnamon Ice Cream is a perfect partner for Apple Pie, a baked apple or any apple desserts commonly eaten in the wintertime. I used the cinnamon sticks to infuse the milk because they give the ice cream full and more complex flavour. The sticks were left in the cold custard overnight and removed just before the process. This is basic homemade ice cream, very simple and natural. It’s a silky, luscious and classic custard-based treat, ideal for any accompaniment - chocolate, caramel, peanut butter. I enjoy Sweet Cream Ice Cream topped with fresh fruits or fresh fruits sauces because its natural sweetness makes a perfect combination with the semi-sour taste of fruits and both create an ideal contrast of flavours. Coffee Ice Cream

There are many recipes for a perfect homemade coffee ice cream. Some call for instant coffee granules, other for steeping grounds in hot milk to get the desired coffee flavour. I simply use a concentrated brewed coffee of good quality and add it to the creamy mixture which makes the taste of the ice cream the way I like. One teaspoon of coffee liqueur enriches the flavour but it is not essential and can be replaced with an extra teaspoon of brewed coffee. Homemade Mayonnaise

Homemade Mayonnaise can’t be compared to any jarred stuff. Store-bought condiment usually lists many ingredients such as colouring, sugar or glucose-fructose syrup while real mayonnaise calls only for egg yolks, oil, vinegar or lemon juice, mustard and seasoning. That’s it! The whole process may look a bit fussy and overly complicated but requires, in fact, a bit of patience, a cook’s strong arm and the ingredients at room temperature. Real homemade mayonnaise is delicious!  It contains natural flavours of its ingredients and can be served as a fancy dip with shrimps or vegetables and even with fries. No-churn Homemade Chocolate Ice Cream

This ice cream is for serious chocoholics only, so rich and full of real dark chocolate that one scoop is enough, believe me. The ice cream base requires tempering eggs with hot cream, however, this is the best base ever because makes the ice cream incredibly creamy and smooth. Furthermore, it’s simple to make and worth the effort. The dark chocolate ice cream doesn’t require an ice cream maker and special equipment.
