100 g unsalted butter
200 g diced finely apples eg. preferably Golden Delicious, Granny Smith

Heat the butter in a pot and let it melt. Set aside, it can’t be hot. Peel and dice finely the apples. |
250 g plain flour
1 tsp cinnamon
1 tsp ground ginger
1 tsp baking powder
1 tsp baking soda
100 g golden caster sugar
70 g brown sugar
25 gr walnuts finely chopped

Place the flour, spices, baking powder, bicarbonate of soda, sugar and walnuts in a mixing bowl. Mix them well. |
2 free range eggs
125 ml full fat milk

In a separate bowl mix the milk and eggs. Add cool melted butter and stir to mix the ingredients well. |
Pour the egg mixture into the bowl with dry ingredients. Combine them gently with wire whisk. |

Add the diced apples and stir them into the dough. |

Preheat the oven to 180°C (up and down)/ Gas mark 4. Place the muffin cases in the muffin tray. Spoon the dough to fill ¾ of each case.

Place the tray into the oven and bake about 25 minutes until golden brown. The muffins are ready when the skewer placed in the dough comes out dry. Let them cool. Serve warm or complete cool. The recipe makes 12 big muffins. |
