We offered the customers of Liberté Chérie Peammus - hummus made from Carlin Peas, with a hint of lemon juice and fully flavoured with cumin and paprika: sweet, smoked and Rosetta Chilli. Carlin Pea also known as Grey or Black Peas, served as Parched Peas boiled and eaten with salt and vinegar, is a wonderful substitute for chickpeas. Peammus perfectly pairs with breadsticks so was served with freshly baked crunchy Italian Grissini.
