Homemade Beef Burgers

Preparing: 1 hour
Cook time: 4 minutes each patty
Ingredients
Method
600 g beef, at least 20% fat, 150 g each patty
Beef with fatCut into cubesMedium coarse grinderRun the meat through the grinder
Cut the beef into cubes and run the meat through the grinder with the coarser disc, I used a medium one. Take a cast iron large pan and heat it, it should be smoking hot, and then lower the heat to medium.
1.5 tsp salt and pepper to taste

Season with salt and pepper and mix well.

Form the patties. Set in the palm of your hand and gently squeeze down, they should be quite flat about 2 cm (0.78 inches) but need to fit the bun. Cook each side for about 1 minute, but cook each side both. So place the pattie on the pan, and after 1 minute flip it over. Cook for 1 minute, and flip over. Again, cook for 1 minute and flip it over. Don’t press down on the meat, as that will squeeze out the juices. Wrap the patty with a piece of baking paper and continue with the rest patties.

Compose the burger. Cut the bun in 2 crosswise. Spread Tartare Sauce over the bottom part of the bun, add the salad leaves and then the patty. Top with Red Onion Marmelade. Spread BBQ Sauce on the top part of the bun and place it over the patty. Continue with the rest, use mustard and mayo instead of Tartare Sauce. You will get 4 burgers.
