For the filling:
250 g fattly minced pork such as pork shoulder
1 large carrot finely diced and fried in oil
1 tbsp fresh ginger grated
2 tbsp bamboo shoots finely diced
1 tbsp light soy sauce
1 tbsp Shaoxing wine
1 tsp sesame oil
1 tsp corn flour
1 large spring onion, chopped
Salt and white pepper to taste

Place the meat in a glass bowl; add carrot, ginger and bamboo shoots, soy sauce, wine, sesame oil and corn flour and mix all ingredients. Season with salt and pepper to taste, and then add chopped spring onion. Cover the bowl with cling film and refrigerate for an hour.
Prepare Homemade Dumpling Wrappers, you will need approx. 18 wrappers from this recipe.

Boiling water
|
Place the chives in a shallow dish and pour over very hot water; leave for 3 minutes – this will make the chives more bendable. Remove the chives from water and place on a kitchen towel.

Take a wrapper and place about a spoon of filling. Gather the wrapper and press tightly to form a bag around the filling and tied with a spring of chives. Continue with all the filling.
In the meantime, line the steaming bamboo basket with baking paper. Transfer the dumplings to the basket leaving some space among them. Divide them between two baskets.

Place the basket in the pan with boiling water. Steam the dumplings about 20 min. Try after this time, the dough should be soft and the filling cooked.

For the dipping sauce
1 tbsp hot water
1 tbsp Agave syrup
2 tbsp soy sauce
1 tsp black rice vinegar
1 tsp minced garlic
1 tsp sesame seeds toasted
½ tsp sesame oil
|
In the meantime, prepare the dipping sauce. Add hot water in a small bowl, add syrup and the rest of ingredients. Stir to combine and transfer to a dipping bowl.
Transfer The Money Bags Dumpling on the serving dish; serve with dipping sauce and pickled vegetables.
