Guacamole: a Classic Mexican Dip

Mild Guacamole
1 ripe avocado
Halve the avocado Remove the pit
 
Halve lengthwise the avocado with a knife, then twist it apart. Remove the pit – you can carefully tap the blade against the stone and twist.
a pinch of salt
¼ lime, one squeeze of juice
Remove the flesh from the avocadoSmash the avocado
 
Scoop the flesh out with a spoon directly on the cutting board and smash with a fork. You'll get a chunky texture, the best for the dip.
Season with saltSqueeze the lime juice Then add the salt and a squeeze of lime juice and mix all ingredients with the fork. Transfer the guacamole to a serving dish and serve immediately.
Guacamole with a kick
1 ripe avocado
Transfer smashed avocado to a bowl
Transfer the smashed avocado to a small glass bowl or soup plate.
½ large shallots, finely chopped
1 small jalapeño chilli, finely chopped
A pinch of salt
¼ lime, one squeeze of juice
A handful of finely chopped fresh coriander or parsley
Add chopped shallots or onionAdd chilliAdd chopped coriander or parsleySqueeze the lime juice
 
Add the shallots, jalapeño and coriander (or parsley), then a pinch of salt and a squeeze of lime juice.
Transfer to a bowl
Combine the ingredients and adjust the flavours if you want the guacamole to be more spicy, sour or salty. Transfer the guacamole to a serving dish and serve immediately.

    Took it to a neighbourhood party. Someone else brought a store-bought guacamole, and everyone said mine was so much better!
