120 g mayonnaise from this recipe or good quality store bought mayonnaise
½ shallots finely chopped
1 small spring onion, only the green part, finely chopped
2 tbsp of finely chopped capers
2 tbsp of finely chopped gherkins
1 tsp of mustard
¼ tsp of curry powder
one squeeze of lemon juice

In a small bowl, combine the mayonnaise, shallots, green part of the spring onion, chopped capers and gherkins, mustard, curry powder.

4 tbsp double cream
one squeeze of lemon juice
|
In a separate bowl, add the double cream and whip. Fold the cream into the mixture. and squeeze the lemon juice. Stir and transfer the sauce to a serving container; refrigerate. Serve with cold cuts, fishcakes and sandwiches. The recipe is inspired by one from the book "Long weekends" by Rick Stein |
