Summer Galettes

Preparing time: 1 hr 20 min Cook time: 3 min per each galette
Ingredients Method
30 g all purpose flour
1 egg yolk
½ egg white
Salt and pepper to taste
1 tbsp vegetable oil
85 ml milk
Add flourAdd milk

Add egg yolkAdd egg whites Add oilAdd pinch of saltAdd pepper

Add flour, milk, egg yolk, whites, and oil to a bowl, and season with salt and pepper. 
Mix all ingredients
Mix to combine all ingredients well and refrigerate for at least 1 hour.
40 g frozen amd cooked or tinned sweet corn
20 g frozen amd cooked green peas
Add sweet cornAdd green peasAdd parsleyMixture of peas, sweetcorn and parsley
Remove from the fridge, add cooked sweetcorn, green peas, and parsley to the mixture and stir to combine.

Preheat a cast-iron blini skillet over medium heat and brush lightly with vegetable oil. I used the skillet for blinis, but you can fry them in a frying pan. Fry galettes and serve with your favourite topping and extras.
