Smooth Cranberry Sauce

Ingredients
Method
300 g fresh cranberries
200 ml tap water
Fresh CranberriesAdd water
 
Rinse the cranberries and place them in a thick bottomed pot. Add 200 ml water and simmer on a very low heat until the fruits are soft. Control the consistency to avoid burning the cranberries. If necessary, add more water.
Transfer soft cranberries to the sievePut the fruits through the sieve
Remove from the heat, transfer the cranberries to the food processor and blitz it until smooth. I prefer put them through the sieve.
1 orange, juiced and zested
100 -120 g light brown sugar
¼ tsp mixed spice
¼ tsp ground ginger
¼ tsp ground cinnamon
Add orange juiceAdd the orange zestAdd mix spice, cinnamon and ground gingerAdd the brown sugar
Add the orange juice, zest, spices and sugar. Add the sugar gradually to adjust the sweetness. Gently heat until the sugar dissolves. Taste and add more sugar if it's necessary.
Transfer the sauce to a clean jar
Transfer the hot sauce to the jars, keep refrigerated or serve immediately.
